Beyond the Macaron: 5 Treats You've Been Missing

Crystal Candy

Our Crystal Candies are our newest product, and they're already going down a treat! They're our take on kohakutou, a traditional Japanese confection made by setting a flavoured sugar syrup with agar and allowing it to crystallise slowly over several days. The name comes from their jewel-like appearance - they're as yummy as they are pretty! Tim has recently published a blog post all about them, where they come from and why we're making them - you can read this here.

Nanaimo

This is a new one to lots of people! The Nanaimo bar is a Canadian no-bake classic, named after the city of Nanaimo in British Columbia. It's built in three layers: a crunchy base of biscuit crumb, coconut and nuts, a smooth custard buttercream in the middle, all topped with milk chocolate - a proper mouthful of contrasting textures that's every bit as indulgent as it sounds. If you've never tried one, it's the perfect introduction to a Canadian classic. You can add one to our pick-your-own brownie and bar gift box here.

 

Pâte de Fruit

You might have spotted these next to the main counter in our shop, or on our social media, and wondered, "what is that?". At its simplest, a pâte de fruit is a purée of fruit heated with sugar. The naturally occurring pectin in the fruit sets the purée into a soft jelly. Lots of people ask what these are like, and although they can be described as a jelly, we think the texture is something closer to a fruit pastille.

Over years of making pâtes de fruits, we've developed a recipe using additional fruit pectin and glucose that lets us incorporate a much wider range of flavours, think Pear & Cinnamon, Sour Cherry and Rose & Lychee  - you'll find them all in our range here.

 

Spiced Peanut Brittle

If you want to try something a bit different that combines sweet, spicy and nutty flavours, then you'll love our Spiced Peanut Brittle. It's made with roasted peanuts and infused with a blend of Mexican chilli powders, cinnamon, and ginger. Each bite offers a balance of flavours, with just a hint of heat. To finish, it's drizzled with rich, dark chocolate, adding a touch of indulgence to this uniquely spiced snack. Grab a bag here.
