We know macarons can feel a little pricier than some other sweet treats, and it’s completely fair to wonder why. Here’s a behind-the-scenes look at what goes into each batch, from the top-quality ingredients we use to the time and care we put into making them.
What are macarons?
Before we go into those factors in more detail, it helps to clarify what macarons are (not to be confused with macaroons!).
Macarons are delicate French biscuits with a buttercream or ganache filling sandwiched between two almond-based meringue shells. Macarons are at the core of our business, and we specialise in bold, modern flavours, all handmade with care.
High quality ingredients
We have the highest standards, so we use the highest quality ingredients to ensure we continue to make world class macarons. We choose ingredients that are true to the flavours we want to create, even when that means higher costs and longer lead times. This means that some ingredients can take a while to reach us, such as the vanilla we use, which is ordered and shipped from France.
Hand crafted
All of our macarons are carefully filled, finished, and packaged by hand to ensure precision, consistency, and genuine care in every box. Our bakery team works with the attention to detail you would expect from a small artisan kitchen, while holding ourselves to the same high standards of a world-class patisserie. From smooth shells to perfectly balanced fillings, each macaron is made to look beautiful, travel well, and taste exceptional when it reaches you.
Production loss
There will always be some wastage during production. We have refined our baking methods, but not every macaron shell turns out perfectly. Although we strive for perfection, batches do occasionally fall short (we're only human!). We recently made rose macarons that didn't meet our standards, so we had to class them as a "failed" batch. That isn't always a bad thing. It gives us a chance to reflect, learn from what happened, and refine our process for next time.
Overall, macarons are a small, luxury indulgence rather than a mass-produced product. Each batch is made using high-quality ingredients and careful techniques, with every piece filled, assembled, and packaged by hand. This level of craft and attention to detail is reflected in the price, and we believe it delivers exceptional quality and value.
