Crusty Lemon Butter Bake

A 1970s classic from the Jimmy Young Radio Show. Soft buttery cake soaked with a lemon syrup that forms a crunchy topping.

Recipe

Ingredients

Cake
6oz butter
6oz caster sugar
2 eggs
6oz self-raising flour

Topping
4oz caster sugar
Juice of 1 lemon

Method

1. Preheat oven to 180°C (160°C fan).

2. Line a 8” square cake tin

3. Melt the butter, then stir in the sugar.

4. Add the flour to cool the mix a little. 

5. Add the eggs and stir until smooth.

6. Pour into the tin and bake for 30 minutes.

7. Mix the lemon juice and sugar to make a paste. Do this just before using. It’s better if the sugar doesn’t dissolve too much.

8. Spread over the cake while still hot.

9. Leave to cool completely in the tin, then cut into squares.
