At their simplest a Pâte de Fruit is a puree of fruit heated with sugar. The naturally occurring pectin in the fruit sets puree into a set jelly. Over the years of making Pâte de Fruit we developed a recipe using additional fruit pectin and glucose that allows us to incorporate a much wider range of flavours that you'll find in our range today.
